Queso Fundido

20150131_171508What’s not to love in this dish – cheese, butter, roasted poblano’s!!!

1 roasted poblano, peeled and cut into strips
1 Tbls butter
salt & pepper
2 c Monterey Jack cheese, shredded
10-12 flour tortillas

Saute’ roasted poblano in butter and season lightly with salt and pepper. Set aside.

In lightly greased oven safe dish add cheese, then lay the poblano strips on top.

Cook on 300 for 4-8 minutes or until cheese is completely melted. Serve with warm flour tortillas.

*Another variation is to add cooked chorizo on top, or sautee’d mushrooms.
