Browned Butter Brownies

I have to admit, as much as I enjoy making things from scratch, I do NOT enjoy brownies form scratch. Give me a good box of Ghiradelli brownies and I’m happy. Anything else takes like cake. Until this one.

10 Tbls butter
1 1/4 c sugar
3/4 c unsweetened cocoa powder
2 tsp water
1 tsp vanilla
1/4 tsp salt
2 large eggs
1/3 c plus 1 Tbls flour

Melt butter in saucepan over medium heat. Continue cooking until butter stops foaming and brown bits form (about 5 minutes). Remove from heat and add sugar, cocoa, water, vanilla and salt. Stir to blend. Add eggs, 1 at a time, beat vigorously. When mixture looks thick and shiny add flour. Beat about 60 strokes. Transfer batter to an 8×8 metal pan lined with foil and greased.

Bake brownies at 325 for 25 minutes. Cool in pan. Then pull foil and brownies out. Enjoy!
