Mammies Blueberry PieOh my mom’s pies! She learned this great pie crust recipe from her mother-in-law and uses it for all of her fruit pies. And of course, most of her fruit comes from her yard – peaches, apples, cherries, blackberries, blueberries! Her pies are the best – nice flaky crust, wonderful fresh fruit flavor!

So here is the recipe we use for her blueberry pies, nice, easy and so delicious.

1 c sugar
3 Tbls cornstarch
2 Tbls flour
1/4 tsp nutmeg
1/8 tsp salt

Mix together and then add:

4 c blueberries
1 Tbls lemon juice

Mix together well.

1 c + 2Tbls flour
1/2 tsp salt

Mix and then add:
1/3 c canola oil

Mix and then add:
2 Tbls water

Mix until the dough forms a ball.

With a damp rag, wet down the place you will roll out the crust. Add wax paper, place the crust on the wax paper, and cover with another sheet of wax paper. Roll the dough out to fit in your pie pan and go slightly over the edges. Place crust in the pan, pour in filling and crimp edges of pie crust.

Bake at 425 for 10 minutes, then 375 for 45 minutes. Serve warm with whip cream.
