Nectarine Sorbet

Who would have thought it would be so easy to make sorbet!?! This is a great recipe recently from Guideposts Magazine. We loved it. Especially with Noah who can’t have lactose (aka – ice cream) – this is a wonderful option with fresh fruit available right now.

6 ripe nectarines, peeled and cut in small shunks
2/3 c water
3/4 c sugar
1/4 tsp lemon juice, freshly squeezed

Place nectarines and water in medium saucepan, covered over medium heat, stirring occasionally. Cook approximately 10 minutes. Remove from heat and stir in sugar. Let cool to room temp. When cool, puree mixture then stir in lemon juice. *Freeze in bowl, stirring the sorbet periodically.

*I found that it took 5-6 hours before it was completely frozen.
