4 boneless skinless chicken breasts, cut in half
8 thin slices deli ham
4 slices provolone cheese, cut in half
2/3 c seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/4 c minced fresh parsley
1/2 cup milk
Flatten chicken with mallet to 1/4 inch thickness. Place slice of ham and 1/2 slice of provolone on each piece of chicken. Roll up and secure with toothpicks. (if freezing omit toothpicks)
In shallow bowl combine crumbs, Parmesan and parsley. In another shallow bowl place milk. Dip rolls in milk, then roll in crumb mixture. (if freezing, place in ziploc gallon bag, seal and freeze).
Place chicken roll ups seam side down on greased baking sheet. Spritz chicken with cooking spray. Bake uncovered at 425 for 25-30 minutes.
From frozen, thaw in frig. Then follow baking instructions up above.
