Mushroom-Spinach Calzone

1 Tbls olive oil
1 8oz pkg sliced baby bella mushrooms
2 garlic cloves, minced
1/8 tsp oregano
4 c spinach
5 Tbls Parmesan cheese
1 1/2 c grated Fontina cheese
1/4 c ricotta cheese
1/4 tsp crushed red pepper
1 13.8 oz pizza dough tube

Heat oil in large skilled – add mushrooms, and cook about 5-7 minutes, til soft. Add garlic and oregano and cook for 1 minute. Add spinach and stir until wilted, about 1 minute. Transfer to bowl and season with salt and pepper.

Roll out dough on baking sheet. Sprinkle half of the Parmesan cheese on half of the crust. Top with half of the Fontina cheese on the same half. Spoon ricotta cheese over cheese. Place mushroom mixture over pizza. Top with remaining cheese and red pepper. Fold plain dough side over filling. Crimp edges and seal. Brush with olive oil.

Bake at 18 minutes at 425 degrees.
