My husband took 1 bite of this and said – wow, this takes me back to our time in Spain! So good – and so many rich flavors from Spain. YUM!
1 pound chorizo
4 anchovy fillets, chopped (reserve 1 Tbls of oil)
3 garlic cloves, chopped
1 28oz can crushed tomatoes
1 c pitted green olives, halved
1/4 c capers
1 Tbls smoked paprika
2 tsp oregano
12 oz spaghetti, cooked in boiling salted water according to package.
Put anchovy oil in a deep skillet and heat at med-hi. Add chorizo and cook for a few minutes. Add anchovy fillets and garlic, cook for another minute. Add remaining ingredients. Simmer at least 5 minutes to blend flavors. Add salt and pepper if necessary.
