We absolutely love this! Great in the crockpot or in the oven!
4 tsp salt
2 tsp paprika (or smoked paprika)
1 tsp onion powder
1 tsp thyme
1 tsp white pepper
1/2 tsp cayenne pepper
1/2 tsp black pepper
Mix well
Add:
2 heaping tsp minced garlic
1-2 Tbls olive oil
Mix well.
1 onion, quartered
1 whole chicken
4 carrots, peeled and cut in 2 inch strips
4 potatoes, peeled and cubed
Rinse and pat dry the chicken. Fill the cavity of the chicken with the onion. Rub the seasoning on the inside of the skin next to the meat, and on the outside of the skin. Add meat to roasting pan and top with carrots and potatoes.
Preheat oven to 250.
Bake uncovered for 5 hours (internal 180 degrees). Let chicken stand 10 minutes before carving.
