Tum Chicken – Kenya Africa Dish

Tum-ChickenIn honor of my dear friend, Tecla Tum – any time we eat this we feel like we’re back in Kenya with you!

6 chicken thighs, skinned
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
3 cups vertically sliced onion
1 tablespoon chopped peeled fresh ginger
1 teaspoon curry powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon ground red pepper
2 large garlic cloves, thinly sliced
1/2 cup chicken broth
1/2 cup dry white wine

Preheat oven to 350°.  Sprinkle chicken with salt and black pepper. Heat oil in large skillet over medium-high heat. Add chicken; cook 4 minutes on each side or until golden brown. Remove the chicken from pan and place in roasting pan.

Add the onion to skillet; reduce heat to medium-low, and cook for 10 minutes, stirring frequently. Add the ginger and next 5 ingredients (ginger through garlic); cook for 1 minute. Stir in chicken broth, and the remaining ingredients, and bring to a boil.

Pour over chicken. Cover and bake at 350° for 1 hour.
