3 c oats (old-fashioned oatmeal)
1/2 c packed brown sugar
2 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
2 eggs, lightly beaten
1 c milk (I’ve also substituted this for coconut milk)
1/2 c butter, melted
3/4 c chopped tart apple
1/3 c fresh or frozen peaches
In large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. Combine the eggs, milk and butter; add to the dry ingredients. Stir in the apple, peaches and blueberries. Pour into an 8″ square baking dish coated with nonstick cooking spray.
Bake uncovered, at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean. Cut into squares. Serve with milk, if desired.
