1 (16 ounce) can black beans, drained and rinsed
1 cup coconut milk
8 corn or flour tortillas
1 pound chorizo sausage, diced
1 small jalapeño, seeded and diced
1/2 yellow pepper, diced
1 (12 ounce) can Rotel tomatoes
1 (4 ounce) can diced green chilies
Shredded cheese, or crumbled queso fresco
8 large eggs
In a small sauce pan combine black beans and coconut milk. Turn on low and occasionally stir.
In a frying pan add a little canola oil and fry corn tortillas till crunchy. Place on plate with paper towel.
In same frying pan add chorizo, jalapeno and yellow pepper, and cook until chorizo is thoroughly cooked. Add Rotel tomatoes and green chilies, mix and heat through.
When ready to serve, place tortilla on plate, add chorizo mix and beans. Top with fried egg, add salsa, avocado & cilantro.
