My kids love these. I often make 2 batches of the dry ingredients – storing one batch in a ziploc baggie in my pantry to pull out another day. The day of – I just add the wet ingredients and make that batch!
1 cup old fashioned oats
1 cup all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
Mix well. Add in:
3/4 cup sour cream
3/4 cup whole milk
2 large eggs
1 teaspoon vanilla extract
2 really ripe bananas, mashed up
Makes approx. 18 pancakes
