Scrambled Eggs with Leeks, Edamame, Croutons & Parmesan

Scrambled Eggs Leeks Edemame1 cup bread, cubed
2 Tbls olive oil
sea salt
2/3 c edamame, steamed in microwave for 3 minutes, and pulled from the pod
8 eggs
1/3 – 1/2 c sour cream
1/3 tsp salt
2 Tbls butter
1.5 c chopped leeks
shredded parmesan cheese

For croutons, cube bread, toss with oil, sprinkle with salt. Lay on a baking sheet and bake at 400 for 10 minutes.

Meanwhile, steam edamame, chop leeks. When edamame have cooled slightly, shell them. Melt butter in large skillet and add leeks. Saute for about 10 minutes. Add edamame. Mix eggs, sour cream and salt together and add to skillet. Cook until eggs are set but still creamy.

Put eggs in serving bowl, sprinkle cheese over it and then toss croutons on top. Serve and enjoy.
