This is just an estimate of what / how we make this. There truly is no recipe. One day I should measure, but….
2 lb hamburger
1 large onion, chopped finely
1 large can (I believe 7 oz) of diced green chili’s
2 Tbls Mchuzi – brand Royco (African spice – I normally bring mine home from Kenya or Uganda, or have friends bring it back) I did see it on Amazon though – so you can buy it here
1.5 – 2 Tbls curry powder
1/2 tsp cayenne pepper
salt – to your liking
2 pkgs Guerrero Tortillas – if you don’t have these look for very thin/fresh tortillas, you don’t want them to be too bready
Brown your meat, onions and chili’s. Then add seasonings and let simmer a few minutes. (This can be made a day ahead of time).
Cut your tortillas in half and put a small portion of meat on the tortilla. Fold into a triangle and seal edges with water. Fry in hot oil until golden brown, and place on paper towel to drain.
