Bake 350 -30-35 min. 13×9 pan sprayed w/ Pam ( I used a smaller ceramic pan).
3 pkg. (16 oz. each) frozen cauliflower, thawed or 1 fresh head of cauliflower
1 lg. onion, chopped
1/3 c. butter
1/3 c. flour
1/2 tsp. salt
1/4 tsp. ground mustard
1/4 tsp. pepper
2 c. fat-free milk
1/2 c. grated Parmesan cheese
TOPPING:
1/2 c. bread crumbs
2 tbsp. melted butter
1/4 tsp. paprika
In a Dutch oven, bring 1 inch of water to a boil. Add cauliflower; return to a boil. Cover and cook for 3 min. Drain. In a large saucepan, saute onion in butter until tender. Stir in the flour, salt, mustard and pepper until blended; gradually add milk. Bring to a boil; cook and stir 1-2 min. or until thickened. Remove from heat. Add cheese; stir until melted.
Place cauliflower in pan; pour sauce over top. For topping, combine the bread crumbs, butter and paprika. Sprinkle over sauce, bake uncovered.
