1 t. Veg oil
1 onion chopped
3 cloves garlic, crushed
1 red pepper, diced
2 cans chopped green chilies
1 can corn
2 Tbls dried cumin
1 Tbls dried oregano
1 tsp ground cayenne pepper
1 tbls fresh lime juice
2 cans chicken broth
3 cups chopped chicken or turkey
3 cans white beans
Optional Toppings
Monterey Jack cheese, shredded
Cilantro
Tortilla Chips
Saute onions, garlic, red pepper and chilies in oil. Add corn and seasonings. Add lime juice and chicken broth and bring to a boil. Turn heat to low an add chicken and beans. Let cook through – at least 20 minutes.
Serve with cheese, cilantro & tortilla chips
