Crab-Cake-BenedictThis is an excellent recipe I received from a friend of mine while she lived in Savannah GA. This is great as an appetizer, an entree, and our most favorite way to eat it is as crab cakes benedict.

1 lb crab meat, chopped or shredded
1/4 c red pepper, diced
1/4 c onion, chopped
3 c bread crumbs
1/2 c mayonnaise
1/4 c cream cheese, softened
1 Tbls dijon mustard
1 egg, slightly beaten
1/2 tsp tarragon
1/8 tsp cayenne pepper
1/8 tsp salt

Combine crab meat, red pepper, onion and /2 c bread crumbs. Beat remaining ingredients in separate bowl. Fold mixtures together. Cover and refrigerate 30 minutes.

Place remaining crumbs in shallow bowl. Drop spoonfuls of mixture onto crumbs and form into patties – coating thoroughly.

Heat oil in skillet over medium heat. Add crabcakes and cook until golden brown on each side.
