2 2/3 c water
1 1/3 c rice – jasmine or arborio
1/2 tsp salt
Bring water and salt to boil, add rice. Cover, reduce heat to low and simmer for 20 minutes.
1/2 c panko breadcrumbs
2 Tbls fresh basil, chopped
3 large eggs, slightly beaten
1 c grated Parmesan cheese
1 garlic clove, pressed
1/4 tsp pepper
Mix rice and above ingredients together. Shape into 16 patties.
1 cup panko breadcrumbs.
Coat rice patties in breadcrumbs.
1 Tbls mayonnaise
1 Tbls creole mustard
1/4 tsp salt
3 Tbls choppped fresh lemon-basil (or 3 Tbls basil, 2 tsp lemon juice, and 1 Tbls lemon juice)
Pulse until well blended.
Cook rice cakes in hot oil – approximately 2-3 minutes on each side. Drain on a paper towel. Serve with lemon basil sauce.
Garnish, if desired with crabmeat or shrimp.
