Soft Molasses Cookies

These have become our go-to cookie for camping, traveling and outings. No chocolate so no melting and they stay SO soft for days and days (if the cookies last that long!). They are absolutely delicious.

3/4 c. butter
3/4 c. packed brown sugar
1 lg. egg
1/2 c. molasses
2-1/2 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/4 tsp. salt

Cream butter and sugar together until light. Beat in egg & molasses until well blended. Combine remaining ingredients and stir into creamed mixture until well blended.

Chill dough before baking for 1 hr.

Shape dough into 3/4″ balls, roll into granulated sugar. Put on lightly greased cookie sheet 1-2″ apart and bakeĀ forĀ 350-8 min. Do not over-bake!
