Alfredo Chicken Pizza

Chicken-Alfredo-Pizza*Do not be tempted to buy a store bought Alfredo sauce – this sauce only takes about 5 minutes and totally makes this pizza!!!

2 boneless skinless chicken breasts, cooked and diced
2 tablespoons butter
2 cloves garlic, minced
1/2 tsp red pepper flakes
1 Tbls all-purpose flour
1 c heavy cream
1/2 c grated Parmesan
1 Pillsbury pizza crust (tube – 13.8 oz)
1 c baby spinach
12-15 cherry tomatoes, halved
1 c grated mozzarella

Preheat the oven to 375 degrees F. Put pizza stone in the oven to preheat while you begin the sauce.

Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened, about 2 minutes. Stir in 1/4 c Parmesan and season lightly with salt and pepper, to taste. Remove from heat.

Carefully remove the pizza stone from the oven and put the dough on top – spread out evenly. Ladle the sauce to cover the bottom of the pizza. Evenly top with the spinach,  tomatoes, chicken and mozzarella. Top with remaining Parmesan. Bake for 25 minutes.Chicken-Alfredo-Pizza2
