Here’s a basic African recipe of what we have made:
1/2 bag of lentils – boiled in water 30-60 minutes (until soft), drained
3 shallots, chopped (you could use 1 small onion)
2 tsp garlic, minced
1 tsp curry powder
1 tsp Mchuzi (African spice) you’d probably need to buy it online, I’ve not seen it in any stores – but recently discovered it on Amazon
1/4 c water
Salt & pepper
1 package wonton wrappers or fresh Guerrero tortillas cut in half
Saute shallots and garlic for 3-5 minutes. Add lentils to pan and mix thoroughly. In small bowl, take curry and mchuzi and mix well with water. Add to pan. Salt & pepper to taste.
Heat oil in big pot, fill each wonton/tortilla with a Tbls of mixture. Fold into a triangle and seal edges with water. Fry in hot oil until golden brown, and place on paper towel to drain.
