Puff Pastry Egg Dish

Puff-Pastry-Egg-DishMy friend, Elaine made this breakfast dish one day when we had our families together – wow! It’s so good. I believe she got it from the America’s Test Kitchen Cookbook. We have made this often over the years. It’s great to serve to company, and the family is always thrilled when we have it.

6 eggs
1/2 tsp salt
1/8 tsp pepper
2 Tbls butter
2 sheets frozen puff pastry, thawed
flour for work surface
1 slightly beaten egg
6 oz cheddar cheese, shredded
8 oz sliced Black Forest ham

Whisk 6 eggs, salt & pepper together. Add butter to skilled and cook scrambled eggs until shiny & slightly wet (2-3 minutes). Transfer to plate and let cool in refrigerator for 15 minutes.

Unfold pastry sheet on lightly floured work surface – smooth out creases. Take slightly beaten egg and brush over pastry. Place 1/2 scrambled eggs on 1 half of pastry shell, 1/2 shredded cheese, 1/2 ham. Continue ton next pastry shell. Fold 1/2 pastry shell over stuffing, and seal edges with fork. Place back in the refrigerator for 15 minutes, until firm, on baking sheet.

Preheat oven to 400. Lightly brush beaten egg on top of pastry shells, then bake for 25-30 minutes. Cool for approximately 5 minutes before serving.
