Eggnog Waffles

The other day my kids were asking for waffles and I thought, surely I can find some type of recipe for waffles with eggnog. It is the season after all. So, I found this recipe and kept it simple! It was SOOO good! Of course, after everyone got their dallup of whip cream and I got ready to take the photo of the perfect waffle on my plate, we were out of whip cream. So you’ll just have to imagine what it looks like until we make it again and have whip cream on hand!

1 ¾ cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon salt
¾ teaspoon cinnamon
¼ teaspoon nutmeg

2 large eggs
1 ½ cups eggnog
6 tablespoons unsalted butter, melted and cooled slightly
1 Tbls bourbon, optional

Whip Cream
Cinnamon & Sugar

In a medium bowl, whisk together the flour, baking powder, salt, sugar, cinnamon and nutmeg. In a large bowl, whisk together the eggs, eggnog, butter and bourbon. Add the dry ingredients to the wet ingredients and mix until just combined. The batter will still be lumpy.

Cook in a waffle maker, until golden brown. Place on plate, dallup with whip cream and then sprinkle some cinnamon & sugar on top!
