Parmesan Spinach Souffle

Parmesan-Spinach-Souffle4 Tbls butter
6 Tbls flour
1 1/4 c buttermilk
2 tsp kosher salt
3/4 tsp black pepper
1 1/2 c Parmesan cheese
8-10 oz spinach, steamed for 2 minutes and coarsely chopped
6 large egg yolks

8 large egg whites

Preheat oven to 375. Butter 8 ramekins/souffle dishes and place on baking sheet.

Melt butter over medium heat, add flour and whisk. Add buttermilk and whisk for 1-2 minutes. Add salt, pepper, cheese and mix together. Add in spinach and egg yolks – stir and set aside.

In a cold metal bowl, beat egg whites with electric mixer until peaks form. Fold egg whites into spinach mixture in 3 additions. Divide equally among ramekins.

Bake for 30 minutes – until puffed and brown on top. Serve immediately and enjoy!
