Gingered Corn Rice Pilaf

Gingered-Corn-Rice-PilafI can’t quite remember where I found this recipe. But the unusual combinations of flavors and the zing of ginger give it such a great taste!

1 Tbls sesame oil
2 garlic cloves, minced
1 Tbls ginger, minced
2 c long-grain brown rice
1 1/2 c fresh orange juice
1 1/4 c water
1/2 tsp salt
1 3/4 c corn kernals
1/4 c cilantro, chopped

Heat oil in large saucepan. Add garlic & ginger and saute’ for 2 minutes. Stir in rice and saute’ another 2 minutes. Add orange juice, water and salt. Bring mixture to a boil. Reduce heat to medium low, cover and simmer 30 minutes.

Sprinkle corn over rice. cover and simmer for 15 minutes. Remove from heat, let stand 5 minutes. Stir in cilantro.
