Zucchini Pie

Most of the members in my family are not huge zucchini fans. However, we had recently received several zucchini from a neighbor and I thought to myself that I had to figure out a way to get them to eat this! This is SO good! All but 1 child in our home liked it and my husband has asked me to make it again!!

4 cups zucchini
1.5 c crushed Ritz crackers
3 Tbls melted butter
4 eggs
1/2 c milk
1/4 tsp nutmeg
salt and pepper
1 c cheddar cheese

In saucepan bring water to a boil and boil zucchini for 5-7 minutes. Drain.

Lightly grease an 8×8 dish and add crushed crackers and melted butter. Press with fork to make a solid crust.

In medium mixing bowl beat eggs, milk and seasonings. Add all but 2 Tbls of cheese and lightly mix.

Place zucchini over crust, add egg mixture and top with remaining cheese.

Bake at 350 for 20-25 minutes.
